Champagne Restaurant is an ideal venue for experiencing new, exclusive fish dishes
Champagne Restaurant, located on the 10th floor of Que Huong-Libery 2 Hotel, is serving exclusive dishes from three kinds of fish—silurids, xu mi (a grouper species) and stingrays.
The dishes are new products of the restaurant’s chef, according to Le Tran Quoc Anh, the hotel director.
Silurid salad, which has the stiff, sweet flesh of grilled dried silurids, a kind of freshwater catfish found widely in the Mekong Delta, and the crispness of morning glory, emits a characteristic fragrance and gives diners an unforgettable flavor.
Xu mi steamed with fermented soybeans and xu mi hot pot with sau, the fruit of a tropical perennial tree known scientifically as Dracontomelon duperreanum, give special appetite thanks to their distinctive flavors. The hot pot looks appealing as it is accompanied with nearly 10 kinds of vegetables, including water lilies, morning glory and sliced banana stem.
The three dishes prepared from the stingray are stingray grilled in banana leaf, curried stingray and a hot pot with stingray, carambula and fermented rice. The stingray grilled in banana leaf is accompanied with aromatic herbs together with a mix of fish sauce and tamarind. The curried stingray, a common dish of Mekong Delta residents, is eaten with eggplants and okras. The hot pot with stingray, carambula and fermented rice, which tastes slightly sour, is served with vegetables and fish sauce mixed with the stingray’s liver.
According to Quoc Anh, the frequent creation of new dishes is part of the three-star hotel’s strategy on developing its restaurant. This strategy is based on diversifying products as well as improving the quality of products and services, which aim to continue to make good impressions on regular customers and attract new diners as well.
On Saturdays and Sundays from December 15, 2011 to January 31, 2012, Champagne offers each diner a glass of wine. During the happy hours from 11 a.m.-6 p.m. on weekends, drinking two glasses of draft beer, guests are given one free of charge.
With its location in the city downtown, Champagne Restaurant has over recent years been an ideal rendezvous for gourmets and business people. The restaurant, which can serve up to 150 guests, opens daily from 6:30 a.m. until midnight.
